A BAKER has worked flat out “like Santa and his elves” over the last few weeks, creating a 30-tier, 22ft-high wedding cake for a young couple who are set to tie the knot in Tipperary today.

Rachel Healy, of Healy Celebration Cakes in Blackpool, Cork city, has spent the last month trying to figure out the logistics of creating a cake which consists of 1,440 eggs, 77kgs of icing, 32kgs of flour and 250 sugar and silk roses.

The bride and groom, who are both just 17 years old, will enjoy their dream cake, adorned with flowers, fake butterflies and diamante. And it is tall enough to reach from the ceiling to the floor and keep their guests fed for weeks.

Ms Healy and two of her employees have worked full time on the cake for the last three or four weeks.

Creating the stands took four days, the edible flowers took another week and figuring out the practicalities of creating such a complicated cake passed countless days.

The baking of the cakes was left until the last minute to guarantee freshness.

Ms Healy, who is a seventh-generation baker and works out of a premises that has served as a bakery for 250 years, says this is one of the most memorable orders she has ever received.

“It is a memorable one. We normally make six wedding cakes a week — 10 if we are lucky. But this was something else. We killed ourselves making it. We often worked from six in the morning until 10 in the evening. But it was fine because we knew we would get there eventually. The couple were delighted and that is the main thing.”

Ms Healy admits she was extremely worried about making the cake because it is difficult to support so many tiers.

“It was a lot of organisation because I thought it was going to hit off the ceiling. But we got there and I am finally deflating after weeks of stress.”

Ms Healy would not be drawn on the price of the cake. However, suffice to say a regular three-tier wedding cake averages at €300 to €400.*

It is understood the wedding today in Roscrea will have a guest list of 200-300 people. The exact location of the wedding has not been disclosed.
